Métis translates in French as mixed culture, which is highly appropriate for this tasteful restaurant and gallery in Petitenget where French, Mediterranean and Asian influences pervade the cuisine, the design and the gallery. A stately entrance leads us past an art space filled with wonderful antiques collected from around South East Asia, and two glimmering boutiques displaying exquisite custom made jewellery. Suddenly we are in a spacious courtyard overlooking extensive ponds brimming with lilies and lotus flowers, beyond which the rice fields glisten in the late afternoon sun. The lower wooden deck is just the place to enjoy the relaxed tropical ambience and some innovative cocktails, starting with an Absolutely Frozen, an impressive tower of green ice comprised of vodka, Midori, lemon juice and sugar creating an unusual and refreshing flavour. The Martini list is rather beguiling, I am drawn to the Mandarin and the Lemongrass but wisely settle on a Passionfruitini, the blend of 42 below vodka and fresh passion fruit is absolutely sublime!

Tables and chairs are scattered under the awnings, and al fresco dining can be enjoyed under the stars. The overall effect is classic yet contemporary, and ultimately stylish. The same can be said of the French Mediterranean cuisine that has just a hint of Asian flavour; the inventive menu has been created by renowned French Chef Nicolas "Doudou", in collaboration with Indonesian Executive Chef Arief Wicaksono. At Métis you will discover fine dining at it's most seductive; the artistry of the presentation on hand crafted ceramics and the elegance of the surrounds enhance the experience.

We start with a Trio of Tartare, three delicate rounds of perfectly fresh seafood; Yellow fin with tobiko and miso; Tasmanian salmon with avocado, and a superb chilled king Alaska crab with scampi, tartare and cream spicy mayonnaise.The Foie Gras Menu is a Metis specialty, featuring Fois Gras Sushi, Terrine of Foie Gras, Foie Gras Raviloi, we are served Our Legendary Hot Foie Gras Port and Raspberry Reduction, Morelo Cherry, Roasted Apple, an impressive portion of tender pan seared foie gras stacked with warm roasted apple. Pan seared foie gras also appears in the Half Boneless Roasted Quail, a dainty serve of poultry accompanied by orange blossom jus and a divine couscous laced with vanilla pumpkin mash, vegetables and dry winter fruit. The Tasmanian Salmon Confit in Extra Virgin Olive Oil has a beautiful texture thanks to a brief sous vide treatment, which takes the edge off the rawness, without effecting the tenderness. It is accompanied by an unusual mascarpone risoni pistachio and a tangy yuzu orange sauce.The Baked Polenta Gnocchi is breaded and coated in parmesan, so is just on the crunchy side, served with garlic butter parsley sauce and Mediterranean vegetables including juicy cherry tomatoes, sweet peppers, and whole cloves of garlic. Lovely!

The Private Wine Cellar as well as being filled with an impressive range of French and Italian wines and champagnes, is also a particularly beautiful and opulent private dining setting, ideal for intimate gatherings, the upstairs private dining area is also available for functions. Enjoy live jazz performances on Thursday evenings, while a sunset dj session warms up Friday nights.

Moving on to dessert, the Salted Butter Caramel Millefeuille is a classic dish with delicious layers of flaky pastry interspersed with caramel cream and crumbled almond. The Maxi Marnier is really something special, a delicate soufflé that is a marvel to behold, with a texture that is beautifully light and dissolves in the mouth, while the rich infusion of Grand Marnier gently warms the belly, it is accompanied by a mini ice Grand Marnier soufflé ; the perfect finish to an exceptional meal.
