Let's Eat! shares a recipe for one of the nation's favourite beef dishes – Dendeng Balado, also known as Dendeng Batokok. Dendeng (spiced strips of jerky) is lean meat trimmed of fat, cut into strips, and then dried with salt and other spices to prevent spoilage. Dendeng Balado originated from Padang, West Sumatra and is commonly served with rice and vegetable soup. It's easy to make, although it takes time to dry the meat, but it is definitely worth the wait. \AM
Ingredients:
- l 250 g non-fat beef, thinly sliced
- l 1 tablespoon lime juice to marinate
- l 1 tablespoon lime juice for the sauce
- l 3 shallots
- l 10 red chillies seeded and roughly ground
- l 2 fresh kaffir lime leafs
- l salt to taste
Directory:
Marinate the meat with lime juice. Leave it for 10 minutes. Put the meat into oven tray pan and bake until half dry. When it's done, fry the meat. Set aside. In remaining oil, sauté the shallots until fragrant, then add kaffir lime leafs and chillies. Stir well. Add the lime juice, salt and the meat. Continue cooking. Add a little of water if necessary.
