AAfter almost 11 years cooking in such acclaimed restaurants as Rivington Grill and Madinat Jumeirah in Dubai, Cafe Des Amis, Holdsworth House and Silversea Cruises; Owen Colville decided to sail away to Bali and is now gracing the Kitchen of Giorgio Italian Cuisine, the stylish and elegant restaurant that fronts the Aston Bali Beach Resort & Spa. A graduate of West Norfolk Technical College with a degree in Hospitality, Owen says that he spent more time and energy working restaurant jobs during college than he ever did on his school work. He knew then that his life’s calling was in the culinary field.
His career shines as brightly as his gold medal collection, with awards from several International Competitions, including World Dock Pudding Champion in 2003 in Yorkshire, England, MLA Black Box in Dubai, and Salon Culinaire in London (2002) and Dubai (2005).
The menu he has implemented at Giorgio reflects his unique style of artfully prepared dishes that incorporate traditional flavors and pairings with a twist.
Today, we are delighted to taste some of his exceptional creations; Beef Tenderloin, served with cauliflower and parmesan puree, braised beef and crispy onion, along with a mouth-watering sweet treat of Vanilla Panna Cotta with Basil Jelly served with marinated strawberries and strawberry sorbet. \AM
